These beauties are Seven years in the making. Hand tumbled the entire way and kept off the bottom. To make for some sweet meat in a clean brine wash.  
We are now offering exstended pickup times (64 Piscataqua RD Dover, NH). For your safety at time of pickup you are required to bring your own cooler with ice to hold shellstock. You want to be able to maintain an ambient air temperature of 45°F or less.


Available hours for pick up are Monday - Friday 9 AM - 5 PM or Saturday's 9-10 AM. All shipments go out Thursday or earlyer (when option is available). They will not last long, we expect to sell out. Pre order only no purchase onsite is available. Must have orders in by Thursday 9 AM before day of pickup.  

 

How Long are oysters good for? Live oysters should be kept in a 35-40F refrigerator or in an ice chest on fresh ice. To further stretch the shelf life, they can be arranged cup side down then covered with a wet paper towel. We generally found oysters to maintain our definition of “freshness” are great up to 14 days after harvest. A typical restaurant in NH can only keep them for up to a week.

 

Fun Fact: Oysters under the right conditions an oyster can live for 3-4 months out of water, some farmers will even use a root cellar for winter storage.
